Baked Noodle Nests with Egg
This delightful dish combines the goodness of baked noodle nests, protein-packed eggs, roasted cauliflower, and stir-fried vegetables seasoned with garlic, ginger, chili, and tamari. Ingredients
Noodle Nests:
- 200g (7 oz) noodles (rice noodles or soba noodles work well)
- 4 large eggs
Baked Cauliflower:
- 1 medium cauliflower, cut into florets
- 2 tablespoons olive oil
- Salt and pepper to taste
Stir-Fried Vegetables:
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 inch piece of ginger, minced
- 1 red chili, sliced
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1 zucchini, julienned
- 2 tablespoons tamari (or soy sauce)
- Salt to taste
Toppings:
- 1/4 cup cashew nuts, chopped
- 2 tablespoons roasted sesame seeds
- 1 tablespoon sesame oil
Instructions
Step 1: Prepare the Noodle Nests
- Preheat the oven to 375°F (190°C).
- Cook the noodles according to package instructions, then drain and let cool slightly.
- Divide the noodles into four portions and arrange each portion into a nest shape on a baking sheet lined with parchment paper.
- Crack an egg into the center of each noodle nest.
- Bake in the preheated oven for 10-12 minutes, or until the eggs are cooked to your desired level of doneness.
Step 2: Bake the Cauliflower
- Toss the cauliflower florets with olive oil, salt, and pepper.
- Spread the cauliflower on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, or until the cauliflower is tender and slightly browned.
Step 3: Stir-Fry the Vegetables
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Add the garlic, ginger, and red chili, and stir-fry for 1-2 minutes until fragrant.
- Add the red bell pepper, carrot, and zucchini, and stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Add the tamari and salt, and stir well to combine. Cook for an additional 2 minutes.
Step 4: Assemble the Dish
- Divide the baked cauliflower and stir-fried vegetables among four plates.
- Place a baked noodle nest with an egg on each plate.
- Sprinkle the chopped cashew nuts and roasted sesame seeds over the top.
- Drizzle with sesame oil.
Step 5: Serve and Enjoy
- Serve immediately while hot.
